The Opportunity

This exciting position is ideal for a creative and dedicated Sushi Chef who thrives in a high-end dining environment. As a Sushi Chef, you will play a key role in developing and delivering exceptional sushi offerings while maintaining the highest standards of quality, consistency, and food safety. 

Key Responsibilities

• Prepare a wide range of sushi, sashimi, nigiri, maki, and contemporary Japanese-inspired dishes. 
• Demonstrate expert fish preparation, filleting, and knife skills. 
• Ensure outstanding food quality, flavour, and presentation at all times. 
• Collaborate on menu development, seasonal specials, and innovative dining concepts.  
• Monitor ingredient freshness and maintain strict quality standards. 
• Follow all food safety, hygiene, and HACCP procedures. 
• Manage stock levels and assist with inventory control. 
• Support and train kitchen team members on sushi preparation techniques and best practices. 
• Deliver exceptional guest experiences through culinary excellence. 

Experience & Skills Required

• Formal culinary training or certification in Japanese cuisine preferred. 
• Minimum of five years’ experience working as a Sushi Chef within a luxury hospitality environment. 
• Advanced knife skills and extensive knowledge of fish preparation and handling. 
• Strong leadership, communication, and teamwork abilities. 
• Ability to perform under pressure while maintaining exceptional standards. 
• Excellent organisational and time management skills. 
• Fluent English communication skills, both written and verbal. 
• Flexible approach to working shifts, weekends, and holidays.
