Role Overview
The Head Chef will manage all culinary operations, lead a team of 20+ professionals, and uphold the standards of a luxury, high‑volume beach club. Working closely with the Group Executive Chef, you will develop new dishes, ensure consistency across all sections, and guide ongoing menu evolution that blends Asian influences, French techniques, South American flavours, and premium Caribbean ingredients.
Success in this role requires operational excellence, calm and confident leadership, deep culinary range, and the ability to motivate and develop a diverse, enthusiastic kitchen team including long‑standing Caribbean staff who form the core of the operation.
Key Responsibilities
- Lead, mentor, and develop a 20+ person kitchen team with emphasis on training, growth, and positive culture
- Oversee all daily operations: prep management, service execution, stock control, and food quality
- Collaborate with the Group Executive Chef on dish development, menu evolution, and seasonal updates
- Maintain consistency and excellence across all kitchen sections
- Ensure top-tier cleanliness, organisation, HACCP practices, and food-safety standards
- Manage ordering, cost control, labour planning, wastage reduction, and supplier partnerships
- Support high-volume service levels—ranging from 150 covers/day in low season to 400+ during peak periods
- Uphold the luxury beach club brand through refined presentation, flavour, and guest experience
Requirements
- 5+ years’ experience as Head Chef or a strong Senior Sous Chef ready for the next step
- Background in high-end restaurants, resorts, or luxury beach clubs
- Broad culinary skill set: Asian, French, South American, and Caribbean cuisine
- Calm, supportive, structured, and motivating leadership style
- Ability to train, upskill, and inspire a diverse team, including emerging Caribbean talent
- Strong operational discipline in ordering, costings, prep systems, and service flow
- Experience in international or island environments an advantage
- Passion for creativity, innovation, and consistency
